Vegetable Broth

I made some vegetable soup yesterday using a broth from vegetable scraps.  I got this great idea from Jay.

You know all those carrot tops, potato peelings, onion and garlic skins, pepper guts, asparagus ends……well you get the idea. This stuff usually just gets thrown out.  I always thought it was a waste.

Now any time I prep vegetables I put the peelings in a bag in the freezer.  When it’s full I stuff the peelings in a pot, cover with water, add 1 teaspoon of olive oil and bring to a boil then simmer for about 45 minutes.

After straining I have a pot of lovely additive free broth.  If I make a lot I freeze the extra.

Just add some vegetables and seasoning and you have a delicious soup.

    What a great idea, like you I always thought it was a waste. Through the winter I make gallons of soup and freeze, so now I will do the same, well done to Jay. Amazing what you discover when your a student!!!
    The USA are going through a tough time weather wise, from what where seeing on the news, your getting the freezing snow and the UK are getting wind and rain. So glad to know that you and Dean are away from it all. Eric said you would have driven to the sunshine!!!
    I now have bread & soup to make when I get back from my holidays, thanks Rose.
