I looked in the cupboard yesterday and there was NO MARMALADE! Â I usually keep well stocked with my favorite toast covering. Â Since we are in citrus country I thought I had better get cracking on cooking some.
I have been making this recipe for many years. Â I grew up eating my moms sharp (not too sweet and lots of peel) marmalade and that’s the type I like to make. Â I have to add grapefruit and lemons to the oranges for added tartness since I have never come across the sour marmalade oranges you can find in England.

After peeling and slivering the zest I cut off the pith and chopped up the fruit. Â Then I added water and let the fruit soak overnight.
Saturday
I cooked the fruit in the water for an hour or so until the fruit and peel were tender.  The pith and seeds were in a cheesecloth pouch.  That was squeezed afterwards to get the extra pectin which helps the jam set. Time to add the sugar and bring to a brisk boil until it looks ready to set.
Into the jars to cool. Â Now it’s time to taste the orangey golden goodness. Â The cupboard is restocked and all is back to Rose normal.

Rose, do you have a specific recipe to share for your marmalade…my favorite is marmalade. I don’t like to add sugar to anything but I see you do? THX! Janell
I don’t think you can make jam without sugar. I use 2 lb prepped fruit, 31/2 pints water, 21/2 lb sugar. I have made with 2 lb sugar but it takes longer to cook.
Tom’s favorite, he wants to know if you put ginger in it. That is his favorite.
No ginger. Just your basic recipe.
We miss your Mum’s marmalade, jams & mince pies (they were the best, nothing has surpassed those) in fact we miss her, the years have flown xx. Will FaceTime soon xxxGina
